Gordon's Favorite Recipes: Sauces

Bar-B-Que Sauce

This is a really great basic Bar-B-Que Sauce. Besides meat, it also goes great with potatoes, omelets and vegi burgers. Like all good Bar-B-Que sauces it combines the taste of something sweet (brown suger), something spicey (pepper sauce and cajun spice mix), and somthing bitter (vinegar). Feel free to experiment with the ingredients. As the varitaions show, there are any number of ways to combine these basic flavors.

Variations:
For variety, try one or more of the following:

  • For a lighter sauce use honey instead of brown sugar.
  • For a heavier sauce use molasses instead of brown sugar.
  • Use a dry beer, dry wine or sherry instead of the vinegar.
  • Use Worcestershire sauce or horseradish instead of Tabasco* brand sauce.
  • Substitute red wine vinegar for cider vinegar and use 2 tablespoons white horseradish instead of cajun spices.
  • Substitute 2 tablespoons soy sauce, and 1 tsp fresh ginger for cajun spices and pepper sauce, and use 2 Tablespoons honey instead of brown sugar
