Brownie Bottom Pudding Pie

Another recipe I found in a magazine, from a Kraft Foods ad. The bottom of this pie is a brownie. Yum, Yum!!

Variations:
For variety, try one or more of the following:

  • Substitute Vanilla or White chocolate pudding.
  • Make the bottom a Blondie (½ recipe) and use Butterscotch or vanilla pudding on top.
  • Add bits of candy, cookies, or carmels.
  • Serve with fresh fruit.
  • Substitute Cheese Cake instead of pudding for top layer.

  Brownie Bottom Pudding Pie

Ingredients:
  • 4 Squares Semi-sweet baking chocolate.
  • ¼ cup (½ stick) butter or margarine.
  • ¾ cup sugar.
  • 2 eggs.
  • 1 tsp Vanilla.
  • ½ cup flour.
  • ½ cup chopped nuts (optional).
  • 2½ cups cold milk.
  • 2 pkg (4 serving size) Chocolate flavor Instant Pudding & Pie filling.
  • Non Dairy Whipped topping (thawed).
Directions:
  1. Heat oven to 350° (325° for glass pie pan). Grease bottom and sides of 9" pie pan.
  2. Microwave chocolate and butter in a microwave-able bowl on high for 2 minutes. Stir until chocolate is melted.
  3. Stir in sugar, eggs and vanilla. Mix in flour, and nuts. Spread in pie pan.
  4. Bake 25 to 30 minutes. Cool.
  5. Pour milk into a large bowl, add pudding mixes. Beat with a wire whisk 1 minute. Let stand for 2 minutes. Spread over brownie pie.
  6. Top with whipped topping. Garnish with shaved chocolate.
  7. Refrigerate until ready to serve.
