Chicken Onion Skillet

Here is a quick way to cook up a tasty chicken dinner. While the chicken is cooking you make up some potatoes and a vegetable. When the chicken is done, use the pan drippings make a great gravy. Then serve it with potatoes and vegetable to round out a complete dinner.

Variations:
For variety, try one or more of the following:

  • The potatoes can be mashed, baked, fried, etc.
  • If you have the time, you can also serve biscuits or brown and serve rolls.
  • Try this with Pasta instead of potatoes.
  • Try this with Rice instead of potatoes.

  Chicken Onion Skillet

Ingredients:
  • 2 Boneless, skinless chicken breast halves.
  • 2 Tablespoons butter.
  • 1 Package dehydrated (powdered) onion soup mix.
  • 1½ Cups water.
  • 1 Tablespoon flour.
Directions:
  1. In a medium skillet over a medium high heat, brown the chicken in butter for 5 minutes. Turn and brown the other side.
  2. Add the water and onion soup mix to the skillet. Bring to a boil.
  3. Reduce the heat. Cover and cook for 30 minutes.
  4. Remove the chicken to a serving platter.
  5. Make pan gravy by sprinkling 1 Tablespoon of flour over the surface of the liquid in the pan.
  6. Use a whisk to briskly stir in the flour. Add water if the mix is too thick.
  7. Simmer uncovered until the correct consistency is achieved. Serve over rice or potatoes.
