"Chicken" Vegi Patties

THis recipe for vegi patties is one that I came up with using the Vegi Burger construction kit that can be found elsewhere on this site. I was trying to make a patty that would have the light flavor and color of a chicken patty.

Can be served hot, or the cold patties can be used in sandwiches.


  "Chicken" Vegi Patties

Ingredients:
  • 1 Can Garbanzo or Great northern beans.
  • 1 Cup Corn flakes
  • ¼ cup Cashews, chopped.
  • ½ Cup Vegetable broth.
  • ¼ tsp each: Onion powder, celery salt, sage, thyme, marjoram, parsley flakes.
  • dash of salt.
Directions:
  1. Drain the liquid off the beans then mash them with a fork in a medium bowl.
  2. Mix in the remaining ingredients.
  3. Drop by the spoonful unto a Pam sprayed baking sheet and form into patties (kind of like making cookies).
  4. Bake at 325° for 35 minutes. Turn over and continue baking for another 25 minutes.
  5. Allow to cool for several minutes before serving.
