Jumbo Stuffed Shells

Jumbo Pasta shells stuffed with cheese. Goes over well at pot lucks.

Variations:
For variety, try one or more of the following:

  • Add one 10 oz. package of frozen chopped spinach (thawed and drained) to the cheese mixture.
  • Substitute 2 cups of cottage cheese for half the ricotta cheese.
  • For meat filled shells, substitute 1lb ground beef, pork, turkey or TVP for half the cheese mixture.
  • Use the cheese mixture to stuff Manicotti instead of shells.

  Jumbo Stuffed Shells

Ingredients:
  • 1 Pkg Jumbo Shells.
  • 4 Cups (2 lbs.) ricotta cheese.
  • 2 Cups (8 oz) shredded mozzarella cheese.
  • ½ cup grated Parmesan cheese.
  • 2 Eggs.
  • ½ tsp salt.
  • ¼ tsp ground black pepper.
  • 3 Cups prepared spaghetti sauce.
Directions:
  1. Cook shells according to package directions.
  2. In a large bowl, stir together cheeses, eggs, salt and pepper.
  3. In a 13x9 inch backing dish, spread ½ cup of spaghetti sauce.
  4. Fill each cooked shell with about 1and ½ tablespoons of cheese mixture.
  5. Arrange the filled shells in the prepared baking pan. If aditional shells remain, place them on top. Cover with remaining sauce.
  6. Sprinkle with additional parmesan or mozzarella cheese if desired.
  7. Cover with foil and bake 35 minutes at 375°
