Red Pepper Sauce

This tasty sauce makes good use of red roasted peppers in a jar. To avoind an acidic taste, look for peppers packed in water or oil rather than vinegar. (If your peppers are packed in olive oil, use it for the oil in the recipie.)


  Red Pepper Sauce

Ingredients:
  • 2 7 oz. jars roasted red peppers, drained.
  • 1 15 oz. container ricotta cheese.
  • 2 small cloves garlic, peeled and crushed.
  • 2 Tbsp olive oil.
  • 2 Tbsp finely chopped fresh basil.
Directions:
  1. Place peppers, cheese, garlic, and oil in a blender or food processor and blend until pureed.
  2. Pour into a sauce pan, add basil.
  3. Heat over low heat, stirring frequently until heated through. Do not boil.
  4. Serve over pasta.
