Turkey Chimichanga's

Flour tortillas
shredded up turkey
any blend of shredded cheeses (I used mild cheddar & montery jack)
chopped chilies (green, banana, whatever you have)
ground cumin
vegetable oil
Salsa
sour cream
quacamole
 
Place some chicken in center or tortilla. Sprinkle with cumin, chilies and cheese.  Fold top and bottom in then fold in sides.  Fry in 1/4 inch veg oil on one side till brown, turn and fry on other side.  Drain on paper towel.  Serve with salsa, sour cream and quacamole.
Simple but really good!
