Mrs. Cheney's Knobby Apple Cake

This recipe comes by way of the Mrs. Cheney, of Cheney Orchards in Brimfield, Massachusetts. The apples must come from Cheney's orchard.

1 cup sugar 1 tsp vanilla
3 Tbsp margarine 1 cup sifted flour
1 egg 1 tsp baking soda
3 cups diced apples 1/2 tsp nutmeg
1/4 cup chopped nuts 1/2 tsp cinnamon
  1. Cream the shortening and sugar.
  2. Add the beaten egg and mix well.
  3. Add the diced apples, nuts, and vanilla.
  4. Now sift in all the dry ingredients.
  5. Mix lightly.
  6. Pour the mix into an 8 by 8 cake pan, and bake it at 350° for 40 to 45 minutes.
  7. You can serve this with whipped cream, ice cream, or plain.
