Hardy Meals





1 1/4 cups butter 2 cups sugar
2 eggs 2 tsp vanilla
2 cups flour 3/4 cups cocoa
1 tsp baking powder 1/2 tsp salt
nuts (optional)

Cream butter and sugar. Add eggs and vanilla and mix well. Add remaining ingredients. Drop by teaspoon onto ungreased cookie sheet. Bake at 350 degrees 8-9 minutes.




1 1/2 cups firmly pckd brown sugar 1 tsp vanilla
1 cup peanut butter 3 cups Quaker Oats
3/4 cup butter 1 1/2 cups all purpose flour
1/3 cup water 1/2 tsp baking soda
1 egg

Heat oven to 350 degrees. Beat together brown sugar, peanut butter and butter until light and fluffy. Blend in water, egg, and vanilla. Add dry ingredients and mix well. Shape dough into 1 inch balls and place on ungreased cookie sheet. Flatten to 1/4 inch thickness with bottom of glass cipped in sugar. Bake 8-10 minutes or until edges are golden brown. Remove to wire rack to cool completely.


Topping:

1 1/2 cups semi-sweet chocolate pieces
4 tsp vegetable shortening
1/3 cup chopped walnuts

In heavy saucepan over low heat, melt chocolate pieces and vegetable shortening and stir until mixture is melted and smooth. Top each cookie with 1/2 tsp melted chocolate and sprinkle with chopped nuts. Chill until set. Store in airtight container.




1 stick butter
10 ozbag marshmallows
8 cups Rice Krispies

Melt butter in large pan. Melt marshmallows in hot butter over medium heat. Add Rice Krispies and stir well to coat thoroughly. Turn into greased 9x13 inch pan. As they start to cool smooth out top.






2 small ripe bananas 1 cup water
1 pkg yellow cake mix 1 pkg Jello Inst. Pudding (banana)
1/4 cup oil 4 eggs
1/2 cup chopped nuts

Slice bananas in large bowl. Beat until well mashed. Add remaining ingredients. Blend then beat at medium speed with electric mixer for approx. 20 minutes. Pour into well greased tube pan. Bake at 350 degrees for 60-70 minutes. Remove from pan and finish cooling. Sprinkle with powdered sugar.




1 cup all purose flour 3/4 cup chocolate syrup
2 tbls vanilla extract 3/4 cup chopped pecans
1/2 cup butter 1 cup sugar
3 eggs dash salt
pecans for garnish

Cream together butter, sugar, and eggs until creamy and well blended. Add salt. Stir in flour, mixing to blend. Add chocolate syrup, vanilla, and chopped pecans. Turn mixture into well greased and lightly floured 9 inch square pan. Smooth top and bake at 350 degrees for about 35 minutes (until toothpick is inserted in center and comes our clean). Cool on wire rack and loosen cake at edges. Cut into squares and garnish with pecan halves. Dust with powdered sugar.




2 cups sugar 1/2 cup peanut butter
1 stick butter 2 tsp vanilla
1/2 cup milk 3 cups instant oatmeal
3 tlbs cocoa

Boil sugar, butter, milk, and cocoa. Add remainin ingredients. Drop by spoonfuls onto waxpaper. Cool at room temp.




1/2 cup butter 1 tsp vanilla
2 eggs 1 1/2 cups flour
2 cups light brown sugar
(packed)
2 tsps baking powder
1/2 tsp salt 1 cup finely chopped nuts

Preheat oven to 350 degrees. Grease 13x9x2 inch pan. Beat eggs until foamy. Add sugar, vanilla, and butter. Stir until creamy. Combine seperately flour, baking powder and salt. Add egg mixture and mix well. Stir in nuts. Spread evenly in pan. Bake 25-30 mimutes until top is slightly brown. Cool.





2 cups diced apples 1 1/4 cups flour
1 cup brown sugar 1/2 tsp cinnamon
2 tlbs melted butter 1/4 tsp nutmeg
1 tsp soda dissolved in 1/2 cup chopped nuts
1 tlbs cold water pinch of salt

Chop apples and add the remaing ingeredients to bowl and mix. If the apples are not real moist it may be necessary to add about 1/4 cups of water to form batter. Place in greased 8x8 pan. Bake 25 minutes at 350 degrees.

Sauce

1 cup brown sugar 1 tsp vanilla
2 tlbs cornstarch 2 tlbs butter
1 1/2 cups boiling water

Combine brown sugar cornstarch, and boiling water. Boil until thickens, remove from heat and add vanilla and butter.

1 10-11 oz bag each Peanut Butter Chips and Butterscotch Chips
1 5 oz can Chow Mein Noodles

Combine both bags of chips and heat on high in microwavable bowl about 2-3 minutes. Just long enough to melt. (DO NOT heat too long, the chips will burn.) Add entire can of noodles and mix well. Drop by spoonfulls onto wax paper. Let cool. These are very rich.



German Spice
Molasses Cookies
3/4 cup butter, softened 1/4 teaspoon salt
1 cup sugar 1tsp. each ginger & cinnamon
1 egg 1/2 teaspoon nutmeg
1/4 cup molasses 1/4 each ground cloves & allspice
2 cups flour 1tsp. each bkng. soda & bkng. powder
1/2 cup sugar

Cream butter and 1 cup sugar at medium speed in mixer bowl until light and fluffy. Add egg and molasses; mix well. Combine flour, baking soda, baking powder, salt, ginger, cinnamon, nutmeg, cloves and allspice in bowl; mix well. Addto creamed mixture gradually, beating well after each addition. Chill dough for 1 hour. Shape into 1-inch balls; roll in remaining 1/2 cup sugar. Place 2 inches apart on ungrease cookie sheet. Bake at 350 degrees for 8 - 10 minutes or until surface of cookie cracks. Cool on wire rack. Makes 4 dozen.
