Food for your Table

He rained down manna for the people to eat, He gave them the grain of heaven.  Men ate the bread of angels; He sent them all the food they could eat. -Psalm 78:24,25

Simple and good.  Great for lent!

Cheesy Tuna Quesadillas

1 package flour tortillas

nonstick cooking spray

2 (6 oz.) cans chunk light tuna, drained

1 can (4 oz) chopped green chilies, drained

2 cups shredded cheddar and/or Monterey Jack cheese

½ cup sliced green onion

salsa, if desired

 

Remove tortillas from refrigerator; set aside.  Preheat oven to 375 degrees F.  Spray a large baking sheet(s) with nonstick spray.  In large bowl combine tuna, chilies, cheese & green onion.  Divide filling on top half of each tortilla within ¼ inch of edges.  Fold tortillas in half over filling.  Carefully place folded tortillas on prepared baking sheet(s).  Bake 6-8 minutes or until edges of tortillas are light golden brown & cheese is melted.  To serve, cut in wedges.  Top with salsa, if desired

 

Scrumptious Cheesecake
 
3 lbs cream cheese  
1/2 tsp vanilla           10" diam x 2" deep
1/4 tsp salt               springform pan
2 c. sugar
3 egg yolks
5 whole eggs
 
1 1/2 c graham cracker crumbs
3 tbsp sugar
6 tbsp butter, melted
 
combine ingredients for crust.  Press firmly into bottom of pan.  Rub side of pan with veg. oil.  Chill until ready to use.
 
Cream cheese.  Add sugar, vanilla salt and eggs.  Pour cake mix into pan.  Do not scrape bowl or try to cream lumps.
Bake for 1 hr.  Loosen with hot wet knife.  Take out of pan.  Cool completely.  Freeze for 24 hrs.
