Corn Chowder

8 oz. Salt pork (or bacon) diced

2 onions, chopped

½  c. celery, chopped

½ bay leaf, crumpled

2 Tbsp flour

4  c. water

3  c. potato’s, diced

2  c. cream corn

2  c. evaporated milk

salt

pepper

paprika

parsley

 

Cook pork till brown and crisp.  Remove and pour off all but 3 Tbsp. drippings.  Add next 3 ingredients and cook for 5 min.  Blend in flour.  Add water and potato’s.  Bring to a boil then reduce heat and simmer covered for 15 min.  Add corn and milk.  Heat well.  Season and add pork.  Makes approx. 2 quarts

 

I have adjusted recipe a bit for my family and also because of sizes of cans.  I use 6 c. water, 4 ½ c. diced potato, 2 cans cream corn and 2 cans evaporated milk.  This is just easier and I hate throwing away what was left in cans.  And my family loves it so there is no problem with it all being eaten.
