Lake's Cornbread

  • Preheat oven 400 degrees

  • 3 cups - Self rising cornmeal - Lake used Three Rivers

  • Sift cornmeal into a bowl

  • In another bowl, beat up one large egg

  • Add approx. 2 cups of buttermilk

  • Add milk mixture into cornmeal until batter is fairly runny

  • 2-3 tablespoon of oil in iron skillet

  • Heat pan and oil for ten minutes

  • Pour in batter

  • Bake till golden brown (about 20 - 30 minutes)

  • Eat hearty!
